Cabbage Thoran /upperi
Though cabbage is not a Kerala grown vegetable . Its a item in Kerala Sadhya (feast). Thoran is like a side dish
with rice and can be prepared with any vegetables like cabbage, carrot or beans . A simple and healthy side dish .
Ingredients:
Cabbage – ¼ kg grated or chopped nicely
coconut oil - 2tbsp
Turmeric powder – ½ teaspoon
Turmeric powder – ½ teaspoon
curry leaf few
For grinding :
Coconut grated – ½ coconut
Small onion – few
Green chillies – 2nos
For Tadka:
Rai – 1 tsp.
Red chillies – 2 no’s
Urad dal -1/4tsp
Method:Urad dal -1/4tsp
Heat oil in a kadai . Splutter all items in tadka . Once done add cabbage, curry leafs , salt and turmeric powder and saute. Close it with lid and let it cook in steam. Meanwhile grind coconut green chillies and onion . It should be just crushed no need to add water, Once cabbage is done add the grinded mixture. Mix well. Close the lid and let it cook in steam. And then switch off the flame.
