Kerala Puli Avial (Vegetables cooked in tamarind and coconut)



Avial is once such traditional  recipe which has all the vegetables used in Kerala cuisine like drumstick raw banana white pumpkin yam red pumpkin beans etc. Normally for feast it is prepared thick as side dish with curd in it . But in parts of thrissur its used as main curry for lunch menu  with tamarind juice. Avial with tamarind is a rare combination but this version of avail tastes yummy with steamed rice.

If your sick and weak by health . Avial is one such recipe to regain your nutrition. This is one of the most frequently made for lunch by grandma , mom or my mother in law  with both curd and tamarind alternatively. Vegetables can be altered as per your  choice

Ingredients

Raw banana  Sliced lengthwise - 1no
Drumstick few cut in lenghthwise - 2no
White pumpkin - 1/4th kg cut in lengthwise
Red pumpkin - 1/4th kg cut in lengthwise
Yam - 1 small piece 
String beans - few
Carrot - 1no
Tamarind soaked in water
Salt
Curry leafs
Coconut oil

Grinding

Coconut 1/2cup
Green chilly 4 or5
Cumin seeds 1tsp

Method

In a heavy bottom pan add all vegetables  water add turmeric powder. Once half boiled add the tamarind juice and salt cover it and let it cook  . Add the grinded coconut paste . Once it startd boiling switch off the flame add 1tbsp of coconut oil and curry leafs on it and cover the lid. The aroma of hot coconut oil and curry leafs roams around the house.
This is a very simple recie with no redchilly powder. Please don’t over cook the vegetables after adding the grounded paste.
