Kerala Vellarikya Pachadi (Yellow oval shaped cucumber)
Pachadi is one such recipe
which in between curry and salad. My grandma recipe used to prepare pachadis on
fire in her traditional cookwares . It would taste awesome . This used to be
side dish for feast during festivals. Its
consistency is quite thick. This comes
under satvik food as it doesn’t contain turmeric and red chilly powders.As Beetroot this is also frequently prepared recipe.
Ingredients
Vellarikya (yellow oval shaped cucumber)
chopped finely into cubes
For grinding
Coconut 1cup
Rai 1/4tsp
Jeera a pinch
Green chilly 2no
salt to taste
salt to taste
Tadka
Coconut oil 1tbsp
Curry leafs
Rai 1 tsp.
Dry red chilly 2no
Method
Boil cucumber in a kadai with
little water and keep aside. Grind coconut with other ingredients grind to
smooth paste. Add the grinded mixture to boiled cucumber add salt. Once boiled Switch
off the flame then add the beated curd in it. In small kadai add the tadka
items and once rai splutters switch off and add to the curry. It’s served with
steamed rice
