Kalan (Yam) Recipe – Kerala Style

 


Kalan –It’s a form of  pulissery which is sour curry simmered in yogurt and coconut gravy. During feast Kalan is the first recipe prepared on the eve of any feast . Aroma of kalan from the kitchen is the indication that there is celebration the next day. Traditionally this recipe made using raw banana and yam Its consistency is quite thick .This recipe was my grandmother’s legacy.




Ingredients:

 
Yam :  ¼ kg  (peeled, chopped into pieces)
Turmeric Powder: 1/2 tsp.
Pepper: 3/4 tsp.

Sour curd- depends on sourness

Curry Leaves: 1 spring
Salt to taste

Rai 1/2tsp

 Fenugreek Seeds: 1 /4 tsp.
Coconut oil: 1/2 tsp.

 

For grinding:

Coconut – 1 small grate

Crushed Black Pepper: 1/4 tsp.

Jeera- 1/4 tsp.

Green chili – 6-7

Method:

In a heavy bottom pan add yam water turmeric powder  crushed pepper and cook it. Yam cooked well add beated sour curd  and let it boil . water consistency should reduce then add the grinded coconut paste .Once its start boiling switch off the flame. Then give the tempering of rai fenugreek seeds, dry red chilly and curry leafs.Its a star item during feast called Kerala Sadhya This curry with go best with steamed rice and rasam. And best to eat it the next day
