Kerala Kaya chena payar mezhukvarti (raw banana,yam,string beans )

Mezhkuvarti is a traditional style dry side dish without coconut in it.   Its stir fried vegetables . Best thing about this is it doesnt have too much ingredients and is classic simple dish and tastes yummy.  Every Kerala household this is one of the favorite mezhukuvarti is prepared with combination of different vegetables. Mezhuvarti is normally prepared when curd based curry is prepared for lunch like kalan or avial.  


Ingredients

Kaya ( raw banana) 1 small chopped in to small cubes

Cheena ( Yam) – 1/4kg chopped into small cubes

Payar ( string beans) – few cut into small pieces

Red chilly powder 1/2tsp

Turmeric Powder 1/4tsp

Salt to taste

Coconut oil 1tbsp

Curry leafs

Rai 1 tsp.

Dry red chilly 2no

 

Method

Cook vegetables with turmeric and red chilly powder and keep it aside .In a kadai add the items of tadka once rai splutters add cooked vegetables and salt.  Cover it and let it cook for 2 minutes in low flame.  Switch off the flame. It’s served with steamed rice  . In this you can also add chopped shallots after adding rai saute and add vegetables… it’s a another version of mezhukvarti.
