Kerala Vazhuthangya mezhukvarti (Brinjal/Eggplant)

 


Mezhkuvarti is a traditional style dry side dish without coconut in it.   Its stir fried vegetables  with onion. Best thing about this is it doent have too much ingredients and is classic simple dish and tastes yummy.  Every Kerala household this is one of the favourite mezhukuvarti is prepared with combination of different vegetables. Mezhuvarti is normally prepared when curd based curry is prepared for lunch like kalan or avail.  

Ingredients

Eggplant 3nos   small chopped in to small cubes

Shallots 10-12 nos

Red chilly powder 1/2tsp

Turmeric Powder 1/4tsp

Salt to taste

Tadka

Coconut oil 1tbsp

Curry leafs

Rai 1 tsp.

Dry red chilly 2no

 

Method

In a kadai add the items of tadka once rai splutters add chopped shallots and fry once turned brown eggplant turmeric powder and red chilly powder and salt.  Cover it and let it cook for 2minutes in low flame.  It cooks really fast open he lid and let it fry . Switch off the flame. It’s served with steamed rice  .
