Kerala Vendakaya Theeyal
Theeyal is an awesome dish with the yumminess of roasted coconut and tangy flavor of tamarind. Theeyal is prepared with various vegetables like ladies finger, bitter guard and small onion. It goes awesome with hot steamed rice. It’s a thick gravy consistency curry.
Ingredients
Lady’s finger (cut into small pieces) -10 no’s
Grated coconut - 1/2 cup
Tamarind small ball soaked in water
Small onion few
Turmeric Powder- 1 tsp.
Red Chilly powder- 3 tspds
Coriander powder – 2 tsp.
Coconut Oil - 1 tsp.
Curry Leaves
Rai 1tsp
Fenugreek seed ¼ tsp.
Dry red chilly 2no
Salt as required
Method
In a kadai add little oil add fenugreek seeds add small onion sauté
add coconut fry it till it turns brown. Add coriander chilly and turmeric
powder and sauté for few seconds add curry leafs switch off the flame. Once
cooled grind it to fine paste and keep aside. In another heavy bottomed vessel
add rai dry chilly and fenugreek seeds. Add lady’s finger and fry for few
minutes till its fried well. Add tamarind pulp a pinch of turmeric powder and salt.
Once boiled add grinded mixture check the salt and sourness and consistency .Normally
Theeyal are thick in consistency but I sometimes prepare it in running
consistency .
Garnish with curry leaves. Serve hot with rice.
