Matyangya Payar Olan (Red pumpkin and lentil in coconut milk)

 


This an another classic recipe for all Kerala sadya . In this recipe lentil and vegetable is cooked in coconut milk. This is an easy to cook recipe provided you coconut milk extract is ready. This too comes under sativic food where no redchilly or other masalas are used.  Vegetables and lentils can be of our choice.

 

Ingredients 

        Red Pumpkin  ( cut into square thin slices )  -2 cups

Red Mung Beans ( Van payar ) - 1/4 cup

Green Chilly- 4 or 5 Nos

         Coconut milk of 1 coconut 1st extract 1/2cup

         Coconut milk 2nd extract 1 ½ cup

Coconut Oil - 1 tsp

Curry Leaves

Salt as required 

 

Method

Pressure cook the red mung beans for 4 whistles first. Wait for the steam inside the cooker to dissipate.

After it is done , open the pressure cooker and  add pumpkin, green chillies salt with  2nd extract of coconut milk  , and let pumpkin cook.  Once the gravy thickens Switch off the flame and add the first Extract of coconut milk . Garnish with curry leafs and coconut oil .Serve hot with rice.
