Dosa podi or Idli podi (Dosa Gunpowder)
Dosa podi is dry powder which is mixed with sesame oil and served. Dosa podi is always used as a substitute for chutney or sambhar for Dosa or idli. But in our family it’s always accompanied with chutneys and sambhars. It goes well with upmas too. Sprinkling podi above hot rava upmas tastes yummy. Podi can be sprinkled on dosa while preparing it. Every part of Kerala prepare it in different style with same Ingredients only the proportion changes. This is my mom’s version which I have been making for quite some time. This podi has a slight crunch of lentils and spices.

Urad
dal /Uzhunnu parippu : 1/4 cup

Channa
dal Kadala parippu : 1 cup
·
Raw rice: 1/2 cup
·
Dry
Red Chillies : 10-15 no’s
·
Jeera:
1 tsp.
·
Pepper
corns : 2tsp
·
Curry
Leaves : 2 sprig
·
Asafoetida hing/kaayam:
1 tsp.
·
Salt
to taste
· Sesame Oil: 1/2 tsp.
Method:
In a kadai Dry Roast Urad dal on low flame until it turns brown and crunchy and remove it in a dry plate and let it cool. In the same kadai dry roast channa dal on a low flame until it turns brown and crunchy. Remove it with urad dal. In the same kadai dry roast rice and remove it the same plate. In the same kadai dry roast red chillies, jeera curry leafs and pepper corns once roasted switch off the flame and add asafoetida powder and salt. Mix it with all the roasted mixture. Once cool, ground it to fine powder and store in an airtight container
Note: The consistency of the powder is your choice. You can
grind it either coarse or fine but we grind it fine. Mix them with gingerly oil
or coconut oil and serve with Idli or Dosa, Enjoy!
