Besan Ladoo (Gram flour desert)
Besan (gram flour) laddu is a delightfully rich dessert with just few ingredients and which melts in mouth. This quick recipe is my childhood nostalgic dessert with the authentic flavours of Maharashtra “Besana che ladoo”.
Besan ladoos are
generally prepared during festival season. These are very healthy and
nutritious. Besides they are pretty easy to make too. The tricky part is to
roast the besan or gram flour. Once you get it right, you will rock it. In Maharashtra, where I grew up, Besan Laddu is made in big batches to
share with family and friends for 10 days leading with Diwali. Almost every
flat in our apartment makes it but tastes different from each neighbour though
prepared with same ingredients .I have grown up eating these ladoo which our neighbour
kaku (aunt) taught mom and my aunt. Mumbai neighbour are our extended family
where everything is shared.
This is a very easy recipe with very
few ingredients.
Ingredients
Besan 1 cup
Rava 1 tsp (to get a crunch)
Powdered Sugar 1 cup (Add cardamom in sugar
while making powdered sugar)
Ghee ¼ cup
Cardamom 3nos
Raisins for garnishing
Method
In a pan heat up ghee. Add
gram flour. You can use regular gram flour too.
Roast the flour in low
heat. Stir continuously or besan may stick to the pan and may burn. Roast the
besan until it turns reddish in colour or smells well roasted.
Roast the besan for almost
15 minutes. It should be roasted properly and should not burn. When it has got
nice reddish colour, turn off the heat. Keep aside to cool it down. It should
be lukewarm and not totally cool. Add powdered sugar and mix well with the besan.
Once the sugar is mixed well roll it into ladoo. Garnish with raisin and roll
again.
