Kerala Beetroot Thoran

 Beetroot being my Ammas favorite vegetable once a week beetroot used to be in her lunch menu as side dish or main curry. So from childhood she use to make me and brother eat all the vegetables. But my brother being picky. She use to make the menu interesting for him .This is a side dish accompanied with any curry. I love to have it with just curd rice. It’s a simple and easy recipe... One of the simplest side dishes we’d always have on our table was a vegetable thoran. A thoran is typically vegetable-based and made with a few spices along with fresh grated coconut. One of my favourites though is beetroot thoran.

There are a few ways to make this recipe. You can grate the beetroots, slice them, dice them I could eat this recipe on its own, but it goes great with a heaping spoon of rice with a ladle of curd poured on top and a good mango pickle. Yummy!!!! My mom serves it with sambhar too.

 

Ingredients

Beetroot 4no peeled and chopped

Turmeric Powder 1/4tsp

Salt to taste

For grinding

Coconut 1/4cup

Shallots 4-5 nos

Jeera a pinch

Green chilly 2no

Tadka

Coconut oil 1tbsp

Curry leafs

Rai 1 tsp.

Dry red chilly 2no

 

Method

Chop the beetroot and keep aside. Grind coconut with other ingredients a In a kadai add the items of tadka once rai splutters add the chopped  beetroot turmeric and salt. Add little water cover it and let it cook. If you find difficult to cook beetroot in kadai. You can add chopped beetroot in pressure cooker with little water and give 2 whistle. Once cooked and water gets evaporated add the grinded paste. Cover it and let it cook for 2minutes in low flame.  Switch off the flame. It’s served with steamed rice. Thoran has a large variety any vegetable can be used .
