Rava Kesari (Semolina Sweet dish)

 


The main ingredients in kesari recipe are ghee, rava, sugar, water and saffron or  food color.

Rava kesari’s North Indian counterpart is Suji ka Halwa which is also equally popular and tastes good. In Maharashtra and Gujarat this same dish is called as sheera which is made with milk mostly. However, there are some variations in the preparations of sooji halwa, sheera and rava kesari. Growing up in Mumbai amma used to try all variations.

INGREDIENTS

Rava 1 cup

Sugar 1 cup

Water 3 cups

Cashew and raisins few

Ghee ½ cup

Cardamom 3nos

Red food color a pinch

 

Method:

 

In a Kadai add 2 tbsp. of ghee and roast cashew and raisins and keep aside in same kadai roast rava till aromatic. In another sauce pan add water sugar cardamom and food color and let it boil nicely. Add this sugar mixture to kadai and mix it very well with no lumps. While it gets thicken water gets evaporated add ghee and mix it again once done add fried cashew and raisin.

Serve hot
