Avial is once such traditional recipe which has all the
vegetables used in Kerala cuisine like drumstick raw banana white pumpkin yam
red pumpkin beans etc. Normally for feast it is prepared thick as side dish
with curd in it. Avial tastes yummy with
steamed rice.
If you’re sick and weak by health. Avial is one such recipe
to regain your nutrition. This one of the most made by grandma or mom or my
mother in law in our households with both curd and tamarind alternatively.
Vegetables can be altered as per your choice
Ingredients
Raw banana Sliced lengthwise
Drumstick few cut in lengthwise
White pumpkin
Red pumpkin
Yam
String beans
Carrot
Salt
Curry leafs
Coconut oil
Grinding
Coconut 1/2cup
Green chilly 4 or5
Cumin seeds 1tsp
Sour curd 4tbsp
Method
In a heavy bottom pan add coconut oil once hot add few curry
leafs then add all vegetables stir it sprinkle water add turmeric powder and
salt. Simmer the gas stove close it with lid and let it cook. Add the grinded
coconut paste. Once it started boiling switch off the flame add 1tbsp of
coconut oil and curry leafs on it and cover the lid. The aroma of hot coconut
oil and curry leafs roams around the house.
This is a very simple recipe with no red chilli powder.
Please don’t overcook the vegetables after adding the grounded paste.
