Avil Vilayichithu (flatten rice sweet) recipe – Kerala Style



Avil / flatten rice/ poha is a common in India it’s available in Red and white colour. In Kerala mostly red flatten rice is used as red rice is grown in abundance and it’s said that it has lots of nutrients. It can be eaten raw with milk /water. Avil vilayichithu is one such nostalgic recipe which I have connected with my childhood memory. My grandma use to prepare it as an evening snack. It can be prepared with jaggery.  During my childhood used to come down to Kerala we cousins used to meet at grandma’s house during summer vacation eat it during evening as a healthy snack.  So feel splendid while having it. This is an easy and healthy recipe with hardly any cooking. This is my ammas recipe. If she had to store it for few days she used to cook everything in a heavy bottom so that it won’t get spoiled as it contains coconut. But I love this instant recipe which is very quick to prepare with available ingredients.

Ingredients:  

 

  Brown aval – 2 cups

 Jaggery – 1 cup or to taste, grated

  Water – 3/4 cup

  Ghee - 2 tbsp.

   Cashews – 2 tbsp.

    Black sesame seeds – 1 – 2 tsp.

    Grated coconut – 3 cup

     Cardamom powder – 1/4 tsp., heaped

     Dry ginger powder / chukku podi – 1/4 tsp.

 

Method

 

Mix avil and coconut keep aside. Dissolve jaggery in 3/4 cup water on medium heat. Set aside.

 In a pan at medium heat, add 1 tbsp. ghee. Fry cashews, black sesame seeds and set aside. Strain and add the dissolved jaggery into the bowl of avil and coconut mixture. Add fried cashews black sesame seeds, cardamom powder and dry ginger powder. Add one table spoon of ghee on top and Mix well.  Store the left-overs in an air tight container.
